This Strawberry Avocado Salsa is a delicious twist on a favorite! Loaded with fresh strawberries, avocado, jalapeño, and cilantro, it’s the perfect summer appetizer!
Can we talk Cinco de Mayo for a second? It’s right around the corner….and once again….my grand ideas about celebrating it haven’t quite materialized. Blame it on busy schedules, the end of the school year, the fact that I was traveling last week, the unfortunate fact that it falls on a Thursday….but at this point, we’ll be lucky if we end up with tacos for dinner!
Am I the only one who feels insanely disappointed not celebrating Cinco de Mayo? I mean – there’s no real reason I should celebrate it (other than chips and salsa and all things delicious). Yet, I still feel like I’m letting myself down. Like there’s this super fun holiday and reason to celebrate….and I’m passing it up!
So here’s my plan: Get a bunch of different kinds of Food Should Taste Good Tortilla Chips (the BEST tortilla chips if you ask me), make a bunch of different kinds of salsa, mix up a few margaritas, and call it a day. A day to celebrate! Without making myself crazy in the process.
So what’s on my menu? Well, clearly this Strawberry Avocado Salsa. Not only is it gorgeous (thank you, strawberries), but it’s incredibly delicious, too! I’m always a fan of savory & sweet, and when you add in the spice of the jalapeño, this salsa becomes a quick favorite. You only have to be slightly adventurous to try it….and I promise that if you do, you’ll love it as much as I do! It pairs amazingly well with Food Should Taste Good Blue Corn Tortilla Chips, which are made with flaxseed, quinoa, and blue corn and are incredibly versatile.
As for the rest of the menu? Well, in addition to this Strawberry Avocado Salsa, let’s mix things up with some Fresh Corn Salsa, Mediterranean Salsa, Peach Salsa, and Blender Salsa. And don’t forget the chips! If you’ve never tried Food Should Taste Good Tortilla Chips, you must!! They’re made with real ingredients, zero trans fats, and no cholesterol. I love them because they’re hearty chips that are perfect for dipping, and they come in every flavor under the sun! So you can really mix things up and have some fun!
And let’s not forget about drinks….how about some Lemon Margaritas? They’d be delicious with these chips all on their own, since the lemon is a nice, light contrast to the robust chips. And they’re also the perfect companion to the flavors in this Strawberry Avocado Salsa! See? Look at that. Our menu is all set! No more disappointment….and no driving ourselves crazy, either. This Strawberry Avocado Salsa is easy peasy and SO delicious! (And the rest of our menu isn’t too shabby, either!)

We’re going to be a little late on celebrating Cinco de Mayo…it’s been a crazy week. BUT I will get a wonderful Mexican feast in, because that is how we roll! I could celebrate it every week!

LOL – I hit send by accident. I have one of those touch screens on my computer and every once in a while I hit something that I don’t mean to. Anyway…your salsa looks amazing! I never thought to pair strawberries with avocados but it looks wonderful! And I LOVE Food Should Taste Good…it’s a staple in our house. I never leave the grocery store without a couple of bags of their chips. They are awesome!

What else is in the salsa? What’s the yellow? Is it mango?
