Let’s talk salsa for a second. Do you love it as much as I do? I’m borderline obsessed…..as in my typical chip to salsa ratio is about 1:2. (Would you like some chips with your salsa??)
It’s probably the reason I love Mexican restaurants so much. You can’t beat endless baskets of warm tortilla chips and homemade salsa. IF the salsa is good, that is. We’ve actually started to judge Mexican restaurants on their salsa…..and if it doesn’t add up, you better believe we won’t be going back!
Given my great love of salsa, I figured it was about time that I come up with my own recipe. After all, you can only hit up your favorite Mexican restaurant so many times in a week, right? But here’s the thing. As much as I love a great fresh salsa, I just can’t handle all the chopping. Especially when I’m spending half my life holding a baby!
The solution? A blender. You wouldn’t believe how easy it is to make salsa in a blender! Just quarter your tomatoes and your onions, toss in some jalapeños and cilantro and lime juice, add in a pinch of salt, pulse it a few times, and you’re good to go! Seriously. It could NOT be easier…..or more delicious! And coming from a salsa lover like me, that says a lot!
Blender Salsa
Ingredients
- 4 cups tomatoes quartered (approx. 6 small tomatoes)
- 1/2 cup red onion approx. 1/2 onion cut into pieces
- 1 cup fresh cilantro
- 1 jalapeño cut into 6-8 pieces
- 1 Tablespoon lime juice
- 1 teaspoon kosher salt
Instructions
- Combine all ingredients in a high powered blender.
- Pulse 6 times or until desired consistency.

I have never tried to freeze, but as long as its packaged well, I think this would work fine!
