Fresh cucumber, tomato, red onion, and feta cheese

what you’ll need for this recipe

Cucumbers – I used 3 large cucumbers, peeled and chopped (about 4 cups). I like using English cucumbers in salads because they have fewer seeds, but any type of cucumber is fine.

Tomatoes – I used 6 Roma tomatoes, cut into 1 inch pieces (about 4 cups). Use any type of tomatoes you like.

Onion – I used 1 large red onion, chopped. Red onion is sweeter and milder than other varieties, making it perfect for salads like this one.

Feta – I used 8 ounces feta cheese. I like using a block of feta (instead of crumbled) in this recipe larger pieces. Substitute crumbled if you prefer.

Vinaigrette – I made a delicious homemade vinaigrette using extra virgin olive oil, red wine vinegar, dried oregano, minced garlic, dijon mustard, salt & pepper. *Substitute your favorite store bought vinaigrette to save time!

  1. What a gorgeous salad — total eye candy! We definitely have our favorites, but this is definitely going on our summer menu!

  2. I can taste that great looking salad through the phone screen. Summers BBQ and salads go hand in hand.

After viewing this recipe on Pinterest, I have eaten this almost daily at work! Takes about 5 minutes to prepare. For a single serving, I cut a whole cucumber, peeled. I slice about 10-12 grape tomatoes in half. Cut up some red onion. I use crumbled feta cheese for a quick add. And finally, for the dressing, I use Lighthouse Red Wine & Olive Oil dressing which you can find in the cold section, next to the salads. Love this salad! <3

I made this for work and I can’t wait to hear the comments! Like a previous comment, it reminds me of a Greek salad. Very delish!

    1. Sometimes old favorites are the best! No claim of innovation….just my take on a delicious combo 🙂

    2. I think that was kinda mean. I personally have never seen this salad (except that I make a Greek salad with the addition of artichoke hearts and black olives which I initially got from a friend’s child’s bar mitzvah, and which I mentioned below and which most likely is not innovative either). Apparently a lot of other people had never seen it before as many people commented as if they had not. Anyway, I don’t think anyone posting recipies is trying win some kind of contest, but rather just posting foods/recipies they like for the benefit of others, you know? Anyway, I hope you’ll post some of your favorites also. I am always looking for something new to me!

  5. I make a very similar salad, except instead of making my own dressing (this dressing sounds AWESOME, by the way), put in a jar or two of marinated artichokes, which has a dressing already in it and I just use that. And I add some black olives. I either go to my grocery’s olive bar, or just get lazy and put in some canned olives. Love it either way…

  6. This is delicious!!! My husband isn’t a fan of tomatoes so I cut back on those and added kalamata olives! This is now a regular in our house!

  7. Yummy! Add kalamata olives and you have a true Greek Salad. (Their dressing is olive oil n I think red wine vinegar) this one sounds wonderful also!

  8. This is my type of salad. And I’m right there with ya….love my “go to’s”☺️ Making this for sure!

Made this today and it’s delicious. Only change I made was substituting raspberry vinegar for the red wine vinegar. It’s a keeper. Thanks for sharing

We had a family get together and I chose to do this delicious salad just by the picture!! Man, did this salad impress! Very fresh, light and crisp with the vegetables. The dressing was perfect mixture. This salad isn’t just a summer salad, its a GO TO SALAD… thanks!!!

This is an amazingly easy and delicious salad. It comes together quickly, especially if you use crumbled feta like I did. I also used cherry tomatoes cut in half and I didn’t peel the cucumber. I think peeling the cucumber is really just a preference, but it’s not necessary and quite honestly, I’m lazy! The dressing is amazing and not a thing was changed. This salad is beautiful, easy to make, and delicious! Perfect summer salad to go with any meal. I served it along side my husband’s grilled steak.

saw that I had three cucumbers on my plant and googled recipes and found this one. It’s a keeper!!! Better the next day! Couldn’t stop eating it!

Made this tonight to go along with brats and potatoes on the grill. One of my cucumbers was bad so I only had two but they were bigger. We were out of feta but had a ball of fresh mozz so I chunked that up. I eyeballed the mustard and used more garlic and s&p because my husband and I just like it that way. It was amazing! So simple and yet so full of flavor! This one will be going into the rotation especially with our cucumbers and tomatoes getting ready for harvest in our garden. Thanks!

  15. I have made this for a family reunion tomorrow. Smells delicious. By tomorrow I think it will be divine. Will let you know. Thank you for the recipe.

  16. Would it work if I added some chickpeas in it as well for a little more of a hardier version? Just wondering if they would combine well or not? thinking of putting this salad as the side dish to my grilled chicken.

Absolutely the best dressing recipe for this type of salad! I added half a box of cooked orzo to make it serve more people. So delicious!

Our dietician at work requested “healthy” dishes for National Dietary Month (we do a potluck monthly), so I found this gem to make. Everyone loved it! I only used half the onion (because I wasn’t sure of everyone’s preferences, and the onion was strong), and I used dried Italian seasoning instead of oregano because that’s all I had on hand. 10/10, I will make this again! I only wish I had taken a picture before we dug in. Thank you!

I’ve made this time and time again and people just rave about it. Sometimes I add black olives if I have them on hand. Kalamata are just too salty for me.
