Sun Dried Tomato Asiago Bruschetta is made with just 5 simple ingredients and packed with delicious flavor! Perfect for snacking, sharing, or serving at your next party!
You know how they say the things we love most about someone are the things that will eventually end up driving us CRAZY? Well, I think they’re on to something. Yep, I’m pretty sure we’ve hit the point in our marriage where the tables have turned. And all the things we used to find endearing about one another…..well, let’s just say they’re not so endearing anymore.
Take, for example, my love of all things creative. At one point, I’m pretty sure that was one of my *best* qualities. But. Now that we have kids, I’m pretty sure Jorden would love for me to be a little less creative and a little more….orderly. (I gotta say – I don’t see that happening.)
Because even though it may be a little messy…..I love getting creative, especially with my kids, and especially in the kitchen. One of our favorite things to do? Come up with new snack creations! We love trying new flavor combinations, and the kids love coming up with their own ideas. I like to think of it as “living curiously”, and I feel great about the fact that I’m encouraging my kids to live (and snack) curiously, too!
Sun Dried Tomato Asiago Bruschetta – a perfect snack
Well, The Laughing Cow is all about reinventing snacking, and has declared January as the official 31 Days of Curiosity. And I must say…these little bruschettas are the perfect way to get started. Made with just 5 ingredients, including the new Creamy Asiago flavor, they come together quickly and are bite sized for easy snacking. Perfect for creative types, orderly types, and everyone who’s up for living (and snacking) curiously!

Sun Dried Tomato Asiago Bruschetta
Ingredients
- 12 mini bruschetta rounds
- 4 wedges The Laughing Cow Creamy Asiago Cheese
- 2 Tbsp. sliced sun dried tomatoes in oil
- 1 Tbsp. pine nuts
- fresh spinach for garnish
Instructions
- Top each mini bruschetta round with 1/3 wedge Asiago Cheese, 2 slices sun dried tomatoes, 5-6 pine nuts, and minced fresh spinach.
- Enjoy!
