If you love Chicken Fajitas, you’ll LOVE this Chicken Fajita Salad! Loaded with grilled peppers, onions, chicken, corn, tomatoes, avocado, and queso fresco….this salad has ALL the best flavors, and a delicious chili lime vinaigrette to top it all off!
It’s a sad sad day when your favorite restaurant closes. The restaurant you’ve been going to for years. The one your whole family can agree on. The first choice 99% of the time….because the chips and salsa are so good, and the food comes so quickly, and everyone always leaves happy.
Or everyone did leave happy….but the last time Jorden pulled up? There was a sign on the door saying “Closed for Remodeling”…..and that was back in March…..and the doors have yet to reopen. Of course, there’s a chance they still will, but let’s just say I’m not holding my breath. No, this is the not the first time one of our favorite restaurants has closed “temporarily” and never reopened. So….we’re trying to move on.
In case you’re wondering how that’s going? Well, it’s not amazing. In fact, it’s seriously hard! Finding a replacement restaurant we love as much as that one? Honestly, at this point I’d rather just do Mexican at home. Because let’s be honest….the Mexican we love? The fajitas and enchiladas and tacos? It’s all SO easy to make at home!
And when it comes to the salads, well, this Chicken Fajita Salad is better than ALL the salads on our favorite restaurant’s menu. Which kind of makes me wonder how it was ever our favorite restaurant. Because if there’s one thing that’s true about me, it’s that I live on salads. And this Chicken Fajita Salad is one I could live on for sure!
Loaded with grilled chicken, veggies, avocado, cheese, and homemade chili lime vinaigrette, it’s fresh, flavorful, and seriously satisfying. And when I whip up some Blender Salsa and Pineapple Guacamole and Lemon Margaritas? I forget ALL about that silly old restaurant. I guess a great Chicken Fajita Salad will do that to you!
Chicken Fajita Salad
Ingredients
- 5 oz. mixed greens
- 1 chicken breast grilled
- 1/2 yellow pepper sliced & grilled or sautéed
- 1/2 green pepper sliced & grilled or sautéed
- 1/2 red pepper sliced & grilled or sautéed
- 1/2 small red onion sliced & grilled or sautéed
- 1/2 c. corn grilled or sautéed
- 1/2 c. grape tomatoes halved
- 1/2 avocado sliced
- 1/3 c. crumbled queso fresco
Dressing
- 1/4 c. olive oil
- 1/4 c. lime juice
- 1 Tbsp. honey
- 1/8 tsp. chili powder
- 1/8 tsp. onion powder
- 1/4 tsp. cumin
- pinch of cayenne pepper
- pinch of salt
Instructions
- Assemble salad ingredients.
- Combine dressing ingredients; mix well and drizzle over salad.

A fave restaurant of mine closed over a year ago and I’m still not over it LOL. But seriously that is just so disappointing! But….lucky for your family, you’re an amazing cook and you’re DIYing it! This looks delish!
