This Chickpea Cucumber Feta Salad has ALL the best flavors! Loaded with chickpeas, cucumbers, red onions, feta cheese, and fresh basil….this salad is so easy to make and is the perfect side dish for any meal!
So. We’re officially in week 3 of summer break. How is yours going?? So far….I have to say ours has been great! We finished our kitchen remodel (woot!), we unpacked the POD that’s been sitting on our driveway (double woot!), and the girls each have 2 full weeks of camp under their belt. And it’s still June!
Week 1 was Girl Scout camp for the three older girls, which they loved (despite the hotter than hot weather and the daily threat of rain) and last week was park & rec day camp for Greta & Nora and cooking camp for Ellia. A first for Nora, and a first for Ellia. And of all the girls and all the camps? I would have to say that cooking camp took the cake. (No pun intended!)
Even though it was only 4 days long, Ellia learned (and cooked) so much! She practiced her knife skills, learned kitchen safety, and made tons of yummy recipes from different cultures. And….she brought home leftovers! Daily! But the most important part of cooking camp, by far, was the confidence she gained. And the desire she now has to keep going with it!
So far, since camp has ended, she’s made a tomato cucumber salad, grilled potatoes, homemade pizza, and just this morning….crepes! All with little to no help from me! I have to say….aside from the fact that she still needs to work on cleaning up after herself….I could really get used to this. She can make the main dish, and I’ll stick to easy sides like this Chickpea Cucumber Feta Salad! Not only is this salad beautiful to look at, but it’s also so delicious to eat. And it makes a great side dish for any meal!
If you love Greek Salad, and chickpeas, this Chickpea Cucumber Feta Salad is a delicious combination of the two. Kind of like my Tomato Cucumber Feta Salad and my Strawberry Cucumber Salad. And, just like those two, it couldn’t be easier to make. I see myself making this Chickpea Cucumber Feta Salad all the time this summer….and bringing it to ALL the summer cookouts. Because it’s that good! A summer where all I have to worry about is delicious side salads? Sign me up!
Chickpea Cucumber Feta Salad
Ingredients
- 2 15 ounce cans chickpeas
- 1 large cucumber chopped
- 8 ounces feta cheese diced
- 1/2 cup diced red onion
- 1/4 cup minced basil
- 1/2 cup olive oil
- 1/4 cup white balsamic vinegar
- 2 Tablespoons lemon juice
- 2 cloves garlic minced
- 1 teaspoon dried parsley
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Drain and rinse the chickpeas. Chop the cucumbers, feta, red onion and basil.
- Combine the chickpeas, cucumber, feta cheese, red onion, and basil in a medium mixing bowl.
- Prepare dressing by combining remaining ingredients in a small bowl or jar. Mix well.
- Pour dressing over salad and stir to combine.

Sounds like a great start to summer vacation, I remember going to Girl Scout camp when I was younger and it was always so much fun! We are almost at the one week mark, my girls didn’t get out until June 21! Still, it feels like we’ve done a lot… It’s amazing how much you can get in over such a short amount of time!!!! The salad looks delicious for summer picnics!
