This salad! It’s one I’ve been making for years now, and it’s still one of my all time favorites. Because you can’t go wrong with 4 ingredients… especially when they pack so much flavor!
Between the fresh vegetables, the tangy feta, and the homemade vinaigrette, this salad covers all the bases. And it couldn’t be easier to make.
It’s the perfect side dish for summer cookouts, potlucks, or dinners with friends. And best of all… you can grow half of what you need in your own garden!

what you’ll need for this recipe
Cucumbers – I used 3 large cucumbers, peeled and chopped (about 4 cups). I like using English cucumbers in salads because they have fewer seeds, but any type of cucumber is fine.
Tomatoes – I used 6 Roma tomatoes, cut into 1 inch pieces (about 4 cups). Use any type of tomatoes you like.
Onion – I used 1 large red onion, chopped. Red onion is sweeter and milder than other varieties, making it perfect for salads like this one.
Feta – I used 8 ounces feta cheese. I like using a block of feta (instead of crumbled) in this recipe larger pieces. Substitute crumbled if you prefer.
Vinaigrette – I made a delicious homemade vinaigrette using extra virgin olive oil, red wine vinegar, dried oregano, minced garlic, dijon mustard, salt & pepper. *Substitute your favorite store bought vinaigrette to save time!
how to make cucumber tomato feta salad
Combine the ingredients. In a large mixing bowl, combine cucumbers, tomatoes, onion, and feta.
Make the dressing. Combine the dressing ingredients in a mason jar or other small container with a lid. Close and shake well to mix.
Add the dressing to the salad. Pour the dressing over the salad and gently toss to combine.
storage tips
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. For the freshest tasting salad, enjoy within 1-2 days!

- Add kalamata olives
- Add chicken, shrimp, or any of your favorite proteins
- Substitute grape tomatoes or cherry tomatoes
- Substitute fresh mozzarella or any type of cheese for the feta
- Add fresh dill, fresh parsley, fresh basil, or fresh oregano
- Make it a pasta salad by combining it with your favorite noodles and doubling the dressing
- Make it a cucumber tomato salad by omitting the feta
- Add a squeeze of lemon juice to the vinaigrette

Ingredients
- 3 large cucumbers peeled and chopped (about 4 cups)
- 6 Roma tomatoes chopped (about 4 cups)

Instructions
- Combine cucumbers, tomatoes, onion, and feta in a large salad bowl.

After viewing this recipe on Pinterest, I have eaten this almost daily at work! Takes about 5 minutes to prepare. For a single serving, I cut a whole cucumber, peeled. I slice about 10-12 grape tomatoes in half. Cut up some red onion. I use crumbled feta cheese for a quick add. And finally, for the dressing, I use Lighthouse Red Wine & Olive Oil dressing which you can find in the cold section, next to the salads. Love this salad! <3

I think that was kinda mean. I personally have never seen this salad (except that I make a Greek salad with the addition of artichoke hearts and black olives which I initially got from a friend’s child’s bar mitzvah, and which I mentioned below and which most likely is not innovative either). Apparently a lot of other people had never seen it before as many people commented as if they had not. Anyway, I don’t think anyone posting recipies is trying win some kind of contest, but rather just posting foods/recipies they like for the benefit of others, you know? I make a very similar salad, except instead of making my own dressing (this dressing sounds AWESOME, by the way), put in a jar or two of marinated artichokes, which has a dressing already in it and I just use that. And I add some black olives. I either go to my grocery’s olive bar, or just get lazy and put in some canned olives. Love it either way…

This is an amazingly easy and delicious salad. It comes together quickly, especially if you use crumbled feta like I did. I also used cherry tomatoes cut in half and I didn’t peel the cucumber. I think peeling the cucumber is really just a preference, but it’s not necessary and quite honestly, I’m lazy! The dressing is amazing and not a thing was changed. This salad is beautiful, easy to make, and delicious! Perfect summer salad to go with any meal. I served it along side my husband’s grilled steak.

Made this tonight to go along with brats and potatoes on the grill. One of my cucumbers was bad so I only had two but they were bigger. We were out of feta but had a ball of fresh mozz so I chunked that up. I eyeballed the mustard and used more garlic and s&p because my husband and I just like it that way. It was amazing! So simple and yet so full of flavor! This one will be going into the rotation especially with our cucumbers and tomatoes getting ready for harvest in our garden. Thanks!
