I was having a conversation recently about Mother’s Day. And about what it is that moms really want on their special day… aside from the homemade cards and IOU coupons and school art projects, of course, which are clearly Mother’s Day necessities.
The answer? Hands down: MIMOSAS. Even better? Pineapple Mimosas! I’ve never met a mom who didn’t love a good mimosa….and really? What’s not to love?! A sweet, bubbly cocktail that’s totally acceptable to have at breakfast? Yes, please! You don’t have to ask me twice.
And as much as I love all mimosas, there’s something about this Pineapple Upside Down Mimosa that’s different. Because, well, it tastes like cake! So not only do you get a cocktail for breakfast…but you get cake, too. Need I say more?
These Pineapple Upside Down Mimosas are perfect for Mother’s Day or summer parties or lazy days by the pool. They take just minutes to make and can be made in batches, which means all you have to do is pour them….and enjoy them!
what you’ll need for this recipe
Bubbly – Bubbly is a key ingredient in any mimosa recipe. I like using Brut champagne or a dry prosecco for less sweetness. Be sure to chill it in advance!
Pineapple juice – Pineapple juice is a fun and delicious twist on traditional orange juice. For best results, use chilled pineapple juice.
Cake flavored vodka – Cake flavored vodka adds a flavor very reminiscent of vanilla cake, truly making this drink taste like pineapple upside down cake.
Garnishes – A small pineapple wedge and maraschino cherry are the perfect garnishes for this mimosa. Leave the stems on the cherries for an extra special touch!

Combine the ingredients. In a champagne flute, combine chilled pineapple juice and cake flavored vodka.
Top with champagne. Top with champagne or prosecco.
Garnish. Garnish with a pineapple wedge and maraschino cherry.
how to make a pitcher of mimosas
Combine the ingredients. Fill a pitcher with 2 cups of pineapple juice. Add 3 ounces cake vodka.
Cover & refrigerate. Cover with plastic wrap and refrigerate until ready to serve.
Add champagne just before serving. Before serving, add 1 bottle cold champagne or prosecco. Pour into champagne flutes; garnish with a pineapple wedge and cherry.
What to use instead of Cake Vodka
Can’t find cake flavored vodka? You can substitute vanilla vodka or whipped cream vodka, both of which will give this mimosa a similar flavor profile. You can also substitute Liquor 43 or another vanilla flavored liqueur.
