Baileys Chocolate Mint Pudding Parfaits combine the classic flavors of chocolate, mint, and Baileys Irish Cream in one delicious no-bake Baileys dessert. Made with layers of Baileys-infused chocolate pudding, Mint Oreos, and Creme de Menthe whipped cream, they’re as easy to make as they are to enjoy!
It’s no secret that I love all things Baileys. There’s just something about the rich Irish Cream flavor that mixes especially well with chocolate… and somehow makes everything better! Whether it’s Baileys Chocolate Mousse or Baileys Chocolate Sheet Cake or my dangerously easy Baileys Chocolate Chip Dip, one is more delicious than the next.
And when it comes to these parfaits? Well… they’re quite possibly the MOST delicious. Because the only thing better than Baileys + chocolate is Baileys + chocolate + mint! Especially in the form of an easy no-bake pudding parfait!
It’s the perfect dessert for St. Patrick’s Day or Christmas… and easy enough to whip up in no time at all. And if you’re looking for a kid-friendly option, they can easily be made without alcohol!

What is a parfait? A parfait is a dessert consisting of layers. It can be made with ice cream, yogurt, fruit, pudding, whipped cream, or a variety of other ingredients. The name “parfait” comes from the French word, which means perfect.
what you’ll need for this recipe
- Pudding mix – I used 1 small (3.4 ounce) box instant chocolate pudding mix. Be sure to use instant, not cook & serve, for this recipe.
- Irish cream – I added 1/2 cup Baileys Irish Cream to the pudding mix.
- Milk – I added 1 1/2 cups milk (I used 2%, but for a richer result, use whole milk).
- Whipped topping – I used 3 cups Cool Whip. Homemade or store bought will both work well.
- Creme de menthe – I added 3 Tablespoons Creme de Menthe liqueur to the Cool Whip. I used green for the pretty color, but you can use clear as well.
- Oreos – I used 12 Oreos, crushed. For more minty flavor, use Mint Oreos.
- Hot fudge – I drizzled the inside of the parfait glasses with 3 Tablespoons hot fudge sundae topping.

- In a small mixing bowl, combine chocolate pudding mix, Baileys Irish Cream, and milk. Whisk 2 minutes; let stand 5 minutes to set.
- In a separate mixing bowl, combine whipped topping and Creme de Menthe.
- Drizzle hot fudge inside parfait dishes.
- Spoon pudding mixture and whipped topping mixture into separate piping bags or Ziplock bags; cut off the tip of each bag.
- Pipe into parfait dishes, alternating between pudding mixture, whipped topping mixture, and crushed Oreos.
Make Ahead Tips
These Baileys Chocolate Mint Pudding Parfaits are a great dessert to make in advance. Simply prepare according to instructions, cover with plastic wrap, and refrigerate until ready to serve. *For best results, add the cookie crumb topping just before serving.
Recipe Variations
- Use any variety of Oreos
- Use chocolate graham crackers or chocolate chip cookies instead of Oreos
- Substitute vanilla pudding for chocolate
- Use mint flavored syrup, mint extract and/or green food coloring in place of creme de menthe
- Use clear creme de menthe to avoid dyes
- Add chopped Andes Candies on top or throughout
kid-friendly (N/A) parfaits
These parfaits can easily be made kid-friendly. Simply replace the Baileys Irish Cream with milk and substitute mint extra and green food coloring for the Creme de Menthe…and you’re good to go!

I made these for Christmas for my husband and myself. We thought they had way too much liquor in them. There is a very overpowering baileys and mint flavor. They are fun and festive and I would make them again but would use half the Baileys and only a couple tablespoons of the cream De mint
and add green food coloring for color. Also I would let pudding sit in refrigerator for awhile to set up a bit. But really like the concept and could do this with many different flavors.
