Can we talk for a minute about kids and activities and how much is the right amount to sign your kids up for? I feel like it’s always been a struggle for me to decide….because the last thing I really want is over-scheduled kids. But instead? I’ve maybe erred on the side of not enough.
Except for this summer. This, apparently, its the summer I make up for all of it by signing my kids up for ALL the activities. Including a few they’re actually not interested in AT ALL! Yes, I may have gotten a little overzealous in my planning. Although, to be fair, it’s not totally my fault.
It all happened late one night, when Jorden and I were sitting around after the girls went to bed, and I had my computer out, and we started talking about summer camps…..and the rest, well, is history. I ended up signing Ellia and Greta up for a 2 night overnight camp….on two different days (oops)….and let’s just say they were less than thrilled when they found out. To the point of tears! And sick tummies. And an overall less than awesome situation.
Long story short, we ended up moving them both to the same week…and they’re dealing with it just fine. The lesson for me? Maybe take it easy on signing them up for ALL THE THINGS. In fact, maybe take a break from signing them up for any more things right now. Because maybe? Maybe I’ve already signed them up for enough.
If our busy schedule is any indication, I think that might be the case. The good news? I’ve gotten really good at quick & easy summertime meals, like this Sheet Pan Greek Chicken! We LOVE Greek flavors, and this Sheet Pan Greek Chicken is the best of all of them! Loaded with chicken, potatoes, eggplant, zucchini, peppers, kalamata olives, and feta cheese, this is one meal our whole family loves! Especially since they can easily avoid any of their not-so-favorite veggies.
And you know what? This Sheet Pan Greek Chicken isn’t just for summer. It’s the perfect easy back-to-school dinner, too! Prepped in just 15 minutes, all on ONE PAN, it really couldn’t be easier! So. Busy summer or not, I hope you’ll give this Sheet Pan Greek Chicken a try! I think you’re going to love it! Almost as much as I’m going to love having my kids at overnight camp….if and when it finally happens!
Sheet Pan Greek Chicken
Ingredients
- 1 lb. raw chicken breast cubed
- 2 c. red potatoes cubed
- 2 small zucchini cubed
- 1 yellow pepper cubed
- 1 small eggplant cubed
- 1/2 c. pitted kalamata olives
- 1/2 c. olive oil
- 2 Tbsp. lemon juice
- 1 Tbsp. oregano
- 1 Tbsp. minced dried onion
- 1 tsp. garlic
- 1 tsp. kosher salt
- 1/4 c. crumbled feta cheese
Instructions
- Preheat oven to 400 degrees.
- Line a large rimmed baking sheet with foil.
- Arrange chicken and veggies on baking sheet.
- Combine ingredients for dressing and whisk well; pour over chicken and veggies on baking sheet.
- Bake for 20-25 minutes or until potatoes are tender.
- Remove from oven and sprinkle with feta cheese before serving.

It’s always a challenge to find the right balance between over scheduling and under scheduling. We don’t want our kids to be bored but on the other hand, we hate to see them not have any down time. Good luck, I’m still trying to find the right balance and I only have one child at home now. As for this chicken, it looks fabulous – I love the Greek flavors and know my family will too.
