You know how some people spend their entire summer at the pool? And eat their lunch there, and play with friends there, and basically live there from June through August? Well. That couldn’t be further from my reality. In fact, it’s July 18, and I have yet to spend one summer day at a pool. And I’m totally okay with that.
I can guarantee my kids are not. But then again, they’re not the ones in charge of 4 kids by a pool! I’m a nervous wreck! And as fun as it might be for them….I’d be hard pressed to say it feels worth worth it to me. Jorden, on the other hand? He’s as cool as a cucumber. As my kids would tell me, I am not the fun one.
What I could get behind? Hanging out near the pool while Jorden is in the pool with the kids. Sipping on a pina colada…or maybe munching on this Pina Colada Fruit Salad…the next best thing! I don’t think that’s too much to ask, do you??
I know for a fact that my family is in love with this salad….because, well, how could they not be!? Pina Coladas are pretty much amazing, and this Pina Colada Fruit Salad has all the same flavors. Made with fresh pineapple, toasted coconut, and a creamy honey lime dressing, this Pina Colada Fruit Salad is delicious enough to satisfy any pineapple lover’s sweet tooth.
And best of all….it’s actually healthy(ish)! Which makes it extra perfect for poolside, or picnics, or really any summertime activity. And even though I’d love to say you don’t have to share, the reality is that once your family and friends get a glimpse of it, this Pina Colada Fruit Salad won’t last long. So be prepared!
Pina Colada Fruit Salad
Ingredients
- 1 whole pineapple cubed
- 1/2 c. sour cream or plain Greek yogurt
- 2 Tbsp. honey
- 2 tsp. lime juice
- 1/4 c. toasted coconut
Instructions
- In a medium mixing bowl, combine sour cream, honey, and lime juice. Stir until smooth and creamy.
- Add pineapple chunks; toss in dressing to coat.
- Transfer to a serving bowl; top with toasted coconut immediately before serving.

As far as I know you can’t buy it toasted….but 325 degrees for 5-10 minutes with a few quick stirs and you’re good to go!

Love the sound of this recipe but dread the thought of cutting up a whole pineapple. what do you think about using canned chunks?

I think that would be fine! Just be sure they are very well drained.
