This Cajun Potato Salad is flavor-packed and delicious! The best twist on a classic summer salad….with a kick!
I partnered with Phil’s Fresh Eggs to bring you this recipe, but as always, all ideas and opinions are my own.Have you ever had those times in life where you feel like you’re dropping ALL the balls? Yeah, I’m there. And not just because it’s the end of the school year, and there’s some type of event or celebration at least once a week. And it’s not just because of our house renovation, and the fact that we have plumbers and electricians and contractors coming in and out all day, while the six of us live and eat in one room of our house. And not just because I’m naturally a little disorganized and prone to dropping balls. Although clearly none of those things help. But when you put them all together, it’s a miracle I even know where any of the balls are!
And you want to know the really funny thing? For some strange reason I had this idea that renovation time was going to be somehow relaxing. Less busy and crazy than normal life. HA! Oh how wrong I was.
The good news? Summer is NOT far off….so I have something to look forward to! And instead of fretting about which balls I’m dropping and whether I’m making it to every single one of the end of school year events….I’m going to choose to focus on summer. And picnics and play dates and cookouts and FOOD. Because, well, focusing on food always makes things feel better….am I right?
Especially when you’re focusing on delicious food like this Cajun Potato Salad! It’s seriously the BEST twist on potato salad ever….because it’s packed with flavor and has just the right amount of kick to keep you coming back for more and more. I swapped out the celery for red and green peppers, threw in some green onions and fresh parsley, and, of course, topped it with Phil’s Fresh Eggs (my favorite)! I LOVE making food I know I can feel good about, and with Phil’s Fresh Eggs I always know I can feel great about the fact that they’re high quality cage-free eggs laid by humanely raised chickens. And since no potato salad is complete without hard boiled eggs on top, it was an obvious choice for this Cajun Potato Salad.

Cajun Potato Salad
Ingredients
- 3 lbs. red potatoes
- 1 red pepper chopped
- 1 green pepper chopped
- 6-8 green onions sliced
- 1/2 c. fresh minced parsley
- 1 c. mayo
- 1/4 c. half & half
- 2 Tbsp. cajun seasoning
- 2 large Phil's Fresh Eggs hard boiled and sliced
Instructions
- Place potatoes in a large pot; cover with water and bring to a boil.
- Boil 15-20 minutes or until tender. Drain and set aside to cool.
- Once cool, cut potatoes into 1 1/2 inch pieces.
- In a large bowl, combine potatoes, peppers, onions, and fresh parsley.
- In a separate small bowl, mix mayo, half & half, and cajun seasoning.
- Pour mayo mixture over potato mixture and stir until evenly combined.
- Top with sliced Phil's Fresh Eggs; sprinkle with additional cajun seasoning and fresh parsley as desired.
