Tropical Mimosas are my new favorite brunch cocktail! This fruity mimosa recipe combines traditional mimosas with Malibu Rum and pineapple juice for a tropical drink that’s perfect for summer!
You know that feeling, post vacation, when you’re forced to jump back into “real life”… and you honestly just want to go back? Yeah, I’m there.
After spending nearly a week in Charleston for a blogging conference (which was more than I had planned due to flight delays) I honestly felt so ready to be home. To see my husband and my kids, to sleep in my own bed, to have some normalcy back in my life. And then…I came home. And remembered my kids were on spring break. And all my ideas of normalcy went right out the window.
They were replaced by trips to the library and Chuck E. Cheese and pottery painting and frozen yogurt. And countless expressions of “Mom, we’re BORED!!!”And then, you know, Easter. All of which led me to create these Tropical Mimosas.
And now that the kids are FINALLY going back to school and I’m FINALLY feeling like normalcy is in sight, all I can seem to think about is being back in Charleston. Ha! I guess we always want what we can’t have. And if I really think about it, it’s not even Charleston I want. It’s the change of routine that comes from being away. It’s the going out and doing things and learning things and having fun. It’s the lack of normalcy I really want. Who knew!?
Tropical Mimosas – anything but normal
So, back to the Tropical Mimosa recipe. These mimosas are the perfect way to add a little ab-normalcy to your life! Because who doesn’t love mimosa cocktails?
And who doesn’t love an excuse to have cocktails with breakfast, like a Bloody Mary bar, and who doesn’t love a few fun additions that take mimosas from regular to SO MUCH FUN!?
It turns out it’s not at all difficult to have a little more fun at home. Just a splash of Malibu rum and a touch of pineapple juice and the basic mimosa fixings….and you’re well on your way to a vacation feel without ever leaving home.
Tropical Mimosas are perfect for Mother’s Day, holidays, or weekend brunch. And once you try them, I guarantee you’ll never go back to “normal” again!
Ingredients in Tropical Mimosas:
- champagne
- Malibu rum
- orange juice
- pineapple juice
- fresh orange slices
- maraschino cherries
Ingredients
- 1 bottle champagne
- 3/4 c. orange juice
- 3/4 c. pineapple juice
- 3/4 c. Malibu Rum
- orange slices pineapple slices, and maraschino cherries (for garnish)
- For a single mimosa:
- 1/2 c. champagne
- 2 Tbsp. orange juice
- 2 Tbsp. pineapple juice
- 2 Tbsp. Malibu Rum
Instructions
- Combine champagne, orange juice, pineapple juice, and Malibu in a pitcher or glass.
- Garnish with oranges, pineapple, and cherries.
- Enjoy!
