So we’re thinking about re-doing our kitchen….and I couldn’t be more excited! It’s been nearly 6 years since we moved in and made some much-needed updates to the 1960’s decor, and honestly, I’m not sure we ever planned to do more. But the longer we live with the old, painted cabinets and squeaky drawers and junky appliances, the more we think that we might be happier if we made some changes. So….here we are!
We’re not exactly sure where to start or how far to take things….do we stick with the same floor plan and just make updates to the cabinets, countertops, and appliances? Do we get rid of the peninsula and put in an island, instead? Or do we go all the way and knock out a wall and start from scratch? Decisions, decisions. Either way, I think we’re ready to take the plunge.
Of course, I’d be lying if I said I wasn’t at least a little nervous blogging without a functional kitchen. I know people do it….but HOW!!?? Not to mention, you know, actually feeding my family. It will be interesting, that’s for sure. I’m envisioning an excess of sandwiches, salads, and slow cooker meals….and for the blog? I’m envisioning lots of easy recipes. Maybe involving alcohol, since I’m sure I’ll need a few cocktails to get me through the remodel.

Moscow Mules – A favorite drink
Do you love Moscow Mules as much as I do? They’re seriously one of my favorite cocktails, and one of the things I love MOST about them is how easy it is to mix them up with different flavors and ingredients. I’ve made Pomegranate Moscow Mules and Orange Moscow Mules and Apple Moscow Mules and now these delicious, refreshing Pineapple Moscow Mules. I’d be hard pressed to say which is my favorite….and really, do we have to choose? Can’t we just agree to drink Pineapple Moscow Mules and ALL the Moscow Mules…..because they’re some of the best drinks ever? And along those lines, you may want to prep yourself for more recipes just like this…..sound good? Good. I knew we were friends for a reason.
Pineapple Moscow Mules
Ingredients
- 4 oz. ginger beer
- 2 oz. vodka regular or pineapple flavored
- 2 oz. pineapple juice
- juice of 1/2 lime
For garnish:
- pineapple wedge and lime wedge
Instructions
- Combine all ingredients in a copper mug.
- Add ice and garnish with pineapple wedge and lime wedge.
- Enjoy!

Sounds yummy. The ginger beer that I like best (Blenheim) is no longer made. I can’t find any ginger beer in my area for the last 3 years. Where did you find they ginger beer that you have?

This drink makes me wish I could enjoy pineapple because it sounds DELIGHTFUL. (Food allergies are the saddest, especially if you develop them later in life.) Since I cannot, I’ll just foist it upon my husband, who I have no doubt will adore this recipe!
