Does anyone else feel like we’re in a kind of strange, post-holiday, waiting-for-warmer-weather, not quite sure what to do with ourselves stretch right now? I’m honestly not sure why I’m noticing it this year…..I’m sure it happens ever year around this time, right? But for some reason, I feel a little lost. In terms of what to be planning for, what to make for dinner, how to spend our time….pretty much everything. Ha! Hopefully it doesn’t last too long…?
Grapefruit Mojitos
I’m sure some of it has to do with the freak warm-up we had here last weekend. We went from temperatures in the 30’s to temperatures in the upper 60’s, seemingly overnight. And we all pulled out our short sleeve shirts and went for walks and put away our winter coats and started craving drinks like these Grapefruit Mojitos! And now….it’s cold again. And the winter coats have to come back out, and we have to remind ourselves that it’s still only mid-February and we should still be making things like soup and hot chocolate and casserole. But….we’re actually still craving Grapefruit Mojitos! Can you blame me for feeling lost!?!?
I just have to remind myself that, before we know it, spring will be here. And clarity will be regained. And instead of wondering what to make, we’ll all start planning for Easter and Memorial Day and (gasp) summer. At which time it will be totally appropriate to drink Grapefruit Mojitos every day! Or something like that….
Grapefruit Mojitos – A weekend cocktail
So let’s talk about this drink I keep telling you about, shall we? Because it really is SO GOOD. I have a bit of an obsession with grapefruit cocktails – between my Citrus Sangria and my perfect Paloma and my Ruby Red & Rosemary Cocktail – not to mention my Grapefruit Vodka Press, which just happens to be my go-to weekend cocktail….! There’s something about the sweet, tart, refreshing flavor of it that gets me every time, and these Grapefruit Mojitos are no different. Of course, you can just make one….but I’m sharing the recipe for a full pitcher. Because I have the feeling one might not be enough. For real.
Grapefruit Mojitos
Ingredients
- 24 fresh mint leaves
- 1 1/2 c. white rum
- 1 c. grapefruit juice
- 1 c. club soda
- 1/2 c. lime juice
- 1/2 c. simple syrup
- grapefruit & lime wedges for garnish
Instructions
- Gently muddle mint leaves in a large pitcher.
- Add remaining ingredients and stir.
- Serve over ice.

We are definitely in some strange weather pattern so I feel the same way, a little lost! We were supposed to go skiing this school vacation but there’s barely any snow left and it was 66° here yesterday! To say I’d enjoy a grapefruit mojo to would be an understatement! These look just SO good!
