And just like that…..it’s 2017! Did you have a fun New Year’s Eve? A relaxing weekend? And, most importantly, are you ready to start 2017 with a bang!? We definitely had a great end to 2016 and a weekend filled with friends, fun, and great appetizers! Even though I’m not feeling quite 2017-ish yet, I’m hoping I’ll get there soon. Seriously, though? Right now I just feel tired!
Tired and holidayed out and a little bit like I’m in a food and drink coma. Because that’s what the holidays do to you….am I right? Which is why January HAS to be all about resolutions. Are you a resolution person? I’m really trying to be, but I have to be honest. They’re not totally my thing. I always feel like I’m probably going to break them anyway, so then what’s the point? I know….so inspiring, right? Ha. But. This year I’m going to try harder.
To drink more water and less wine, to get a little more sleep, and to be better about making healthy breakfast recipes. Daily. If I had to guess, the breakfast one will actually be the easiest….because there are so many delicious breakfast options! And this Blueberry Pie Smoothie is right up there at the top.
Blueberry Pie Smoothie – Pie for breakfast!
Made with just 5 simple ingredients, a blueberry pie smoothie comes together in a snap and tastes JUST like blueberry pie.For breakfast! I can guarantee I’ll be enjoying quite a few Blueberry Pie Smoothies in the new year….for breakfast, for snack, for dessert!?!?
As for the rest of my resolutions, let’s just say there are no guarantees. Although feeling holidayed out definitely helps. For the time being, at least, water sounds better than wine….and crawling into my warm bed sounds like the best idea ever. Almost as good as a Blueberry Pie Smoothie. Almost.
Blueberry Pie Smoothie
Ingredients
- 1 cup vanilla yogurt
- 1 cup almond milk
- 1 cup fresh or frozen blueberries
- 1 frozen banana cut into chunks
- 1 teaspoon vanilla extract
- 1 graham cracker optional
Instructions
- Combine all ingredients in a blender; blend until smooth.
