I distinctly remember being a kid and keeping a running list, and then promptly throwing that list out the window as soon as I had kids of my own. Because once you become a parent, you see things through a parent lens. No matter how hard you try not to!
So even though my childhood self thought I would never say no to play dates….or enforce a bedtime….or let the house get so messy we’d have to frantically clean up when someone was on their way over….my kids would tell you differently. And even though I vowed to always let my kids eat the cookie dough and watch TV without guilt and have as many sleepovers as they wanted….well, the truth is that now I’m a mom. And I think like a mom! And, to be honest, I really can’t turn it off.
So even though I want to be okay with them sneaking into the kitchen and cutting themselves little slivers of whatever dessert I just made, my “mom” reaction is to put a stop to it. Immediately! Because there’s a time and place for desserts, and if you want a piece just ask, and kids really shouldn’t be using knives, and they don’t even cut them evenly!
In case you’re wondering, yes, my childhood self is cringing listening to my mom self. And, at times, even my mom self is cringing! I seem to have a way of putting a stop to all the fun. Seriously – if my kids want a couple extra slivers of Pumpkin Pecan Pie Bars, is that REALLY the worst thing in the world?
Let me tell you: No, it’s not. And not just because these bars are absolutely amazing, or because they encompass all the best flavors of fall, or because I’ve made them twice in the last week. But because sneaking little slivers of Pumpkin Pecan Pie Bars is what being a kid is all about. It’s fun! And my mom self can feel even better about it, because these bars are made with Pick ‘n Save’s new Simple Truth line of products.
I love the fact that Pick ‘n Save has such a great variety of Simple Truth offerings, which means it’s easy for moms like me to find natural, honest ingredients we can feel good about feeding to our kids. See how I did that there? I put the mom lens right back on. But at least this time it’s in favor of my kids enjoying Pumpkin Pecan Pie Bars to their little hearts’ content. Pumpkin Pecan Pie Bars
Ingredients
Crust
- 2 c. Simple Truth flour
- 3/4 c. butter softened
- 1/3 c. Simple Truth sugar
Pumpkin Layer
- 1 egg beaten slightly
- 1 14 oz. can Simple Truth Pumpkin Puree
- 3/4 c. Simple Truth sugar
- 1 Tbsp. pumpkin pie spice
- 1/2 tsp. salt
Pecan Pie Layer
- 2 eggs beaten slightly
- 1 c. Simple Truth sugar
- 1 c. light corn syrup
- 2 Tbsp. butter melted
- 1 tsp. vanilla
- 2 c. Simple Truth chopped pecans
Instructions
- Preheat oven to 375 degrees.
- Combine ingredients for crust in a medium mixing bowl; press into the bottom of a greased 9x13 inch pan.
- Bake at 375 degrees for 10-12 minutes. Remove from oven and reduce heat to 350 degrees.
- In a separate bowl, combine ingredients for pumpkin layer and stir until mixed.
- Spread pumpkin mixture evenly over baked crust.
- Combine ingredients for pecan pie layer and stir until mixed.
- Spread pecan mixture evenly over pumpkin mixture.
- Bake at 350 degrees for one hour.
- Cool completely; store in refrigerator.

OH. and MY. and GOSH! I cannot wait to make these! They are on the list for sure for Thanksgiving! By the way, I know exactly what you mean about having the mom dilemmas followed by the mom guilt. It doesn’t help when your child tells you that she is keeping a book of all your failings which she plans to present to you when she grows up.
