Asparagus Goat Cheese Flatbread is a delicious taste of spring! Crispy flatbread topped with fresh asparagus, creamy goat cheese, pine nuts, and balsamic glaze. An easy appetizer that’s perfect for Easter or any occasion.
There are so many reasons to look forward to spring… and fresh asparagus is definitely one of them. Because there’s nothing better than enjoying fresh vegetables (or fruits, for that matter) when they’re actually in season. And for asparagus, spring is it!
As much as I love just throwing it on the grill or in the oven as a side dish, I always feel like there’s more we could be doing with it. Like… putting it on flatbread!
Hear me out on this one. I know it’s a little unconventional, but this Asparagus Goat Cheese Flatbread is seriously just SO good. The combination of tender-crisp asparagus, creamy goat cheese, oven-toasted pine nuts, and balsamic glaze is absolutely to die for… and the flatbread makes it all that much better.
And best of all? It’s seriously easy to make. Just assemble the flatbreads and pop them in the oven. Then go enjoy everything else spring has to offer!
what you’ll need for this recipe
Flatbread – I used naan flatbread, which I found in the bread aisle at my local grocery store. Substitute pita, foccacia, or any type of flat, chewy bread.
Asparagus – 1 bunch of fresh asparagus, ends trimmed. I left it in whole stalks, but feel free to cut it into smaller pieces if you prefer.
Goat cheese – 1 small goat cheese log OR crumbled goat cheese. I prefer non-crumbled for this recipe because it tends to be creamier and allows for larger pieces on the flatbreads.
Pine nuts – Pine nuts add a nutty flavor and light crunch to this recipe. Substitute chopped walnuts or pecans if you prefer.
Olive oil & balsamic glaze – Olive oil & balsamic glaze add flavor to this flatbread and keep it from being dry. Feel free to drizzle with extra olive oil at the end.
Recipe Variations
- Use any type of bread as the base
- Substitute feta, Parmesan, or blue cheese for goat cheese
- Use chopped walnuts or pecans instead of pine nuts
- Add prosciutto, ham or crumbled bacon
- Add additional vegetables, such as sliced mushrooms, onions, or tomatoes
- Add a layer of garlic herb cream cheese spread
- Drizzle with basil pesto or sun dried tomato pesto
- Sprinkle with Italian seasoning or add fresh basil after baking
storing & reheating
Leftovers can be stored in a covered container in the refrigerator for up to 5 days. They are best reheated in the oven at 350° for 10-12 minutes or until warmed through.
