This Banana Berry Split is made with creamy yogurt, a whole banana, 4 types of berries, chopped pecans, and a drizzle of honey. So you can have a banana split for breakfast…..and feel great about it!
I don’t know about you, but around here, it’s beginning to feel a lot like summer! The girls have been signed up for summer school and park & rec activities, Jorden has started digging our new fire pit, there are bins of summer clothes cluttering the upstairs hallway, the first of our summer birthday celebrations is just 2 weeks away, and we know exactly how many days of school are left in the school year. Yep….summer is officially in the air.
And I, for one, am ready to have some summer fun! No more jam packed schedules and homework and soccer practice and concerns about gym shoes and library books and tests. When you think about it, it’s pretty amazing that for nearly 3 months out of the year, we have nowhere we actually need to be! Of course, anyone with kids will tell you that you can’t go an entire summer without a schedule….but at least it can be a fun one, right??
So….here’s the plan. Every morning we wake up to a delicious, nutritious breakfast. Something that’s packed with all the good stuff we need for a fun-filled day. These Banana Berry Splits are kinda perfect – between the fruit and the nuts and the extra creamy, protein-packed yogurt….they’re something I could see us waking up to more mornings than not. And then, after we’re done with summer school or whatever activity we have planned for the day, we have some FUN.
I’ve always wanted to have a summer fun jar filled with different ideas for us to do each day. Visit a new park. Go bowling. Find a free concert. Get ice cream. Have a race in the backyard. Go to the library. Read books under the stars. Catch fireflies. Take a picnic to Grandma & Grandpa’s. The list could go on and on…..and I’m sure the girls have plenty of their own ideas. And I’m thinking THIS is the summer to do it. And you know what? I can’t wait.
Banana Berry Split
Ingredients
- 3/4 cup yogurt
- 1 banana
- 1/8 cup blueberries
- 1/8 cup blackberries
- 1/8 cup raspberries
- 1 strawberry split in fourths
- 2 Tablespoons chopped pecans
- 1 Tablespoon honey
Instructions
- Assemble banana split by dividing yogurt into 3 small containers (I used decorative paper cups I found at HomeGoods).
- Top each container with berries.
- Place containers in a row, surround with banana halves (sliced lengthwise) and strawberries.
- Sprinkle with pecans and drizzle with honey.
- Enjoy!
