Girl Scout Cookies. There’s really no way for us to avoid them! We’ve been selling them for the past four years…..first for Ellia and then for Greta…..and let’s just say we’ve had LOTS of cookies over the years.
If I’m being totally honest, we usually buy even more than we really want or need….because we feel some level of responsibility for not having sold more! But not this year. This year, we were on the ball. Not only did we sell to family and friends, but Jorden actually took the girls out for a little door-to-door sales action.
I didn’t get to witness it firsthand, but from what I hear, Greta is quite the little salesgirl! She came up with a pitch and everything…..and the only people that turned her down were the few who had already bought from someone else. At the end of the day, we sold 79 boxes of cookies. Which might not sound like a big deal to you, but for us, is something to celebrate!
Samoa Banana Boats
What better way to celebrate than with these simple and delicious Samoa Banana Boats? They have all the flavors of the Samoa cookies we love, with a yummy, healthy banana boat twist! Perfect for holding us over while we wait for the real deal to arrive; perfect for making us feel better once the real deal is all gobbled up!
Samoa Banana Boats
Ingredients
- 1 banana
- 1/4 c. toasted coconut
- 1 Tbsp. chocolate sauce
- 1 Tbsp. caramel sauce
- For Chocolate Sauce:
- 1 c. sugar
- 1/3 c. cocoa powder
- 3/4 c. evaporated milk
- 1/4 c. butter
- 1/2 tsp. vanilla
- For Caramel Sauce:
- 1 1/3 c. brown sugar
- 3/4 c. evaporated mil k
- 1/4 c. butter
- 1/2 tsp. vanilla
- 1/4 tsp. kosher salt
Instructions
- Peel banana and slice lengthwise, being careful not to cut all way through.
- Pull banana halves open; fill with toasted coconut.
- Top with chocolate sauce and caramel sauce.
- For Chocolate Sauce:
- Combine cocoa powder and sugar in small saucepan; blend in evaporated milk.
- Add butter.
- Cook and stir constantly until mixture begins to boil.
- Remove from heat and stir in vanilla extract.
- For Caramel Sauce:
- Combine brown sugar and evaporated milk in small saucepan.
- Add butter.
- Cook and stir constantly until mixture begins to boil.
- Boil 2 minutes, stirring.
- Remove from heat and stir in vanilla extract and salt.
