These Lemon Birds’ Nest Treats are the perfect sweet treats for Easter! Made with crunchy chow mein noodles covered in lemony white chocolate and topped with 3 Lemonhead birds’ eggs, they’re cute, simple, and delicious!
It has been nearly 3 years since we moved into the house we now call home – our Lemon Tree Dwelling. And it’s funny, because when we moved in I was almost exactly as pregnant as I am now….and I had an entire house to unpack! To be honest, though, unpacking was the least of my worries….because the house we moved into and the house we live in now are two very different things. Our house, at the time, was an absolute wreck! Even though Jorden had basically lived here for an entire two weeks before the actual move, and had spent every free moment during those two weeks painting walls and doors and cabinets and replacing floors and sinks and toilets….there was still a LOT of work to be done. And not just on the inside!
I know you are thinking “how bad could it have been?”….but let me tell you, it was BAD! Not only was everything completely outdated, it was filthy! And damaged! And disgusting! The house had been on the market years earlier and hadn’t sold, so the owner had decided to rent it out. To a giant multi-generational family. Who didn’t take care of it. At all. (You can check out some before & afters here!) And the outside was just as bad as the inside….in fact, we are STILL working on it three years later!
Originally, I think we were both drawn to the “woodsy” feel of the yard. Coming from a tiny house with a tiny lot that butted right up to neighbors on all sides, we were ready for some space! And some privacy! And privacy is exactly what we got….in the form of a million and one overgrown trees. And weeds. But especially trees! We had trees growing into power lines and trees growing into our neighbors’ yards and a HUGE evergreen tree growing right smack dab in the middle of our back yard. Within the first few months we had a number of the larger, more problematic ones professionally removed, and since then Jorden has taken it upon himself to remove many more of them. We added grass where there was none, we poured a patio in the back, we planted flowers in the front, and slowly but surely, our yard has started to look like a place you might actually want to be!
In the process of all this, though, I think we may have confused the birds, who were used to using our yard as their nesting ground! They had their pick of any tree on the lot….and now that has all changed. So why do I think we’ve confused them? Well….last spring, a robin started building a nest under our patio table umbrella. (Which, by the way, is suspiciously close to where that giant evergreen tree used to be.) And as much as we wanted to let her keep going, we knew that it would be bad news for all of us if she ended up building her nest right where we eat! So we shooed her away, and removed the twigs and leaves she had placed there, and lo and behold, she came back with more. Which we removed again….and I’m telling you we had to remove her materials a good 6 or eight times before she finally gave up! We were at it all afternoon, and it felt like absolute insanity! Maybe by this year the birds will have moved on. We can only hope!
Of course, spring wouldn’t be spring without ANY birds’ nests….which is why I made these adorable little Lemon Birds’ Nests as an alternative! They’re crunchy and sweet, with a kick of lemon and an extra dose of cuteness. The kind of birds’ nest you actually want at your table!
Lemon Birds’ Nests
Ingredients
- 3 c. chow mein noodles
- 16 oz. Vanilla Candiquik *reserve 1 oz.
- 1 tsp. lemon extract
- Lemonheads candy
Instructions
- Melt 15 oz. Candiquik over low heat, stirring constantly.
- Add lemon extract and stir to combine.
- Stir in chow mein noodles to coat.
- Spoon into "nests" on wax paper (approx. 2 inches each).
- Melt additional 1 oz. Candiquik over low heat; top each nest with a small amount and place 3 Lemonheads on top.
- Allow nests to cool and harden on the counter top or in the refrigerator.

Oh houses are just so much fun aren’t then when they are in that condition. We still have tons of odds and ends to do! Luckily we haven’t had any problems with the birds! These are so cute and fun!
