I know it’s not the worst habit in the world…and it’s not like we actually do it that often….but it’s probably not the best habit, either. And the biggest problem with it? Salads are my go to. Which is exactly where this Caribbean Grilled Chicken Salad comes in. Because even though getting takeout is fun….there are only so many Southwest salads a girl can eat. Am I right!?? Caribbean Grilled Chicken Salad
Ingredients
- 1 5 oz. container BrightFarms Spring Mix
- 1 Simple Truth boneless skinless chicken breast, marinated
- 1/2 c. fresh pineapple chopped
- 1/2 c. red pepper chopped
- 1/2 mango chopped
- 1/2 avocado chopped
- 2 Tbsp. shredded carrots
- 2 Tbsp. shredded purple cabbage
- 1 Tbsp. sliced almonds
For marinade (optional):
- 2 Tbsp. orange juice
- 1 Tbsp. olive oil
- 1 tsp. lime juice
- 1 Tbsp. soy sauce
- 1 Tbsp. fresh cilantro minced
- 1/2 Tbsp. honey
- 1 clove garlic minced
- 1/4 tsp. ginger
- 1/4 tsp. allspice
For the dressing:
- 1/4 c. olive oil
- 2 Tbsp. lime juice
- 1 Tbsp. honey
- 1 tsp. dijon mustard
- 1/4 tsp. ginger
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- pinch of allspice
Instructions
- (Optional) Combine ingredients for marinade; pour over chicken breast and marinate 1 hour or overnight.
- Grill chicken until no longer pink.
- Assemble salad by topping spring mix with pineapple, red pepper, mango, avocado, shredded carrots, purple cabbage, sliced almonds, and grilled chicken breast.
- Combine ingredients for dressing; shake well.
- Pour dressing over salad as desired.
