So we’re considering blowing through some walls. Opening things up around here. Doing what we can to make our house feel less like a cave and more like a place we want to stay for the foreseeable future. Because as much as we love our Lemon Tree Dwelling, the reality is we could love it so much more. And I, for one, am feeling committed to making that happen.
The only problem? Our home improvement list is long, and the things on it are expensive. Like removing a load bearing wall and remodeling a kitchen and adding an extra window or two. Not exactly easy on the bank account….especially when the list just. keeps. getting. longer.
The reality is, I think we need some time to mull it over. To decide if we’re really up to it. So for now, we’re doing all the boring things. The things that need to be done but aren’t nearly as exciting as getting a new kitchen. Things like having our front step replaced and getting trees cut down and having our soffits and fascia wrapped and maybe even repaving our driveway. Exciting stuff, right?!
And then, once we check everything off that list, I’m crossing my fingers that we’re ready for the good stuff. Although I have to admit – I’m a little nervous about the thought of living in a house that’s under construction. Especially when the construction involves the kitchen! How will I cook? How will I bake? HOW WILL I BLOG!??
And then I remember: I have a slow cooker! And all is well in the world. Because when you have a slow cooker, you can make delicious things like this Slow Cooker French Onion Chicken. Or the Slow Cooker Hawaiian Chicken I posted earlier this week. Or the Crock Pot Italian Chicken I love so much. Just you wait and see – I’m going to take the crock pot world by storm!
But first, this Slow Cooker French Onion Chicken. It’s basically chicken breasts cooked in French Onion Soup, then topped with Swiss cheese and served over polenta or mashed potatoes. I’m not exaggerating when I say my kids GOBBLED this down. Every one of them asked for seconds, which is nothing like their usual dinner behavior. So you better believe Slow Cooker French Onion Chicken is making its way onto our regular menu. Even in the pre-construction phase.
Slow Cooker French Onion Chicken
Ingredients
- 4 large boneless skinless chicken breasts
- 2 large vidalia onions thinly sliced
- 2 Tablespoons butter
- 14 ounce can beef broth
- 2 Tablespoons cooking sherry or dry white wine optional
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 4 slices Swiss cheese
Instructions
- In a large skillet over medium-high heat, melt butter and saute onions until golden brown.
- Remove from skillet and add to slow cooker.
- In the same skillet, brown chicken breasts on both sides over medium-high heat, 3-4 minutes.
- Remove from skillet and add to slow cooker with onions.
- Add beef broth, cooking sherry or wine, minced garlic, and salt.
- Cover slow cooker and cook on low heat 4 hours.
- Top with sliced swiss cheese and spoon onions & broth over the top to melt.
- Serve over polenta or mashed potatoes.

So, I will say that I had limited access to my kitchen for about 4 days due to a roof leak that caused our kitchen ceiling to weaken to the point that our light fixture started to fall. And it was ROUGH. I hated not having uninhibited access to my kitchen, lol. It makes it even harder when you happen to be a food blogger. 😉 But I know the renovations will be well worth it for you all in the end. And what a great idea to plan on using your slow cooker more when you do decide to take the leap! This chicken dish looks amazing!
