Well…..it was an interesting night around here. It all started when we were doing bedtime, which, around here, can last all night! As usual, we took the conquer and divide method (it’s really the only way with 4 kids) and somewhere in the midst of feeding Myla and laying with Nora I heard Ellia say she wasn’t sure if Santa Claus is real. WHAT!?!?!?!?!?!?
To be fair, this is not the first time she has brought up the idea that Santa might not be real. But this time was different. This time it wasn’t just that some people in her class are talking…..this time the talking was really making her wonder! About the “realness” of Santa Claus, and the Easter Bunny, and leprechauns…….
I have to admit – it was quite a moment for me. Sure, I know she’s 8 and I’m sure a lot of 8 year olds don’t even pretend to believe……but Ellia is different. She’s innocent and sweet and just the other day Jorden and I were joking that she would be the oldest kid ever to still believe in Santa Claus. And I loved that idea. And now that she’s starting to question, I just want to freeze time and keep her little and make her believe in magic. Forever!
Luckily, between Jorden, Greta, and myself, we were able to strong arm her out of doubt. We threw around phrases like “Hopefully Cubby {the elf} doesn’t hear and report back to Santa” and “I wonder what Santa gives kids who don’t believe” and the old favorite, which Ellia came up with, herself…..”Do you really think Mom & Dad would have bought you an iPad??? Santa MUST be real!” But the very best of all came from Greta: “Ellia…….you’re never too old to believe in Christmas!”
Crispy Peanut Butter Toffee Truffles – So rich and decadent!
For now, our plan is to do our best to keep the magic of Christmas alive. And just in case you need a little extra Christmas magic, too…..these Crispy Peanut Butter Toffee Truffles are full of it! They’re sweet and crispy and packed with the delicious flavors of peanut butter and chocolate and toffee. And best of all, they melt in your mouth and leave you feeling happy. Which is the best kind of magic of all.
Crispy Peanut Butter Toffee Truffles
Ingredients
- 1 cup crunchy peanut butter
- 1 Tablespoon butter softened
- 1 cup powdered sugar
- 8 ounce package milk chocolate toffee bits
- 1 cup crisp rice cereal
- 10 ounces milk chocolate I used Candiquik
Instructions
- Cream peanut butter and butter in a large bowl.
- Add powdered sugar and mix well.
- Gently stir in toffee bits (reserve 1/3 c.) and crisp rice cereal.
- If necessary, refrigerate to reduce stickiness.
- Roll into 1 inch balls.
- Refrigerate one hour or more.
- Melt chocolate on stove top or in microwave; coat balls in chocolate and sprinkle with toffee bits.
- Place on wax paper to dry.

I agree with Greta! At the same time, it’s SUCH a fearful moment that I dread. We haven’t had any questions yet – but my oldest is ten so I am sad to say this is likely the last year. One batch produced 20 truffles for me. Some were larger than others so one batch could easily make 24 truffles. They are so rich and delicious they don’t have to be big.

You can use any type of chocolate (baking bar, chocolate chips) mixed with a bit of shortening to help with the melting process. A good rule of thumb is 1/2 tsp. shortening for every 1 ounce of chocolate. Hope this helps!

I made these for xmas and they are soooo good! Simple to make. I used chocolate chips with a little coconut oil. i didnt put them in the fridege after balling. this may have helped with the chocolate part. i have run into chocolate getting hard and then its a disaster. Thank you for sharing this recipe!

Made these yesterday and had to box them up right away to keep from eating them all!!! They are unbelievably good.!!!! We are going to include them in our annual Candy Boxes for the holidays. Our family and friends will go wild. Very nice addition to our homemade Chocolate Covered Creams, Peanut & Raisin Clusters, Rocky Road Candy, and who knows what else I’ll come up with. Next time I may use just a little less powdered sugar or rice cereal though. The mixture was very difficult to incorporate all the dry ingredients.

Drop them into the chocolate and take out with a fork. Do not stab it…scoop it out so excess chocolate drips off and put on wax paper.

I made these for my family and now need to make another batch. I also sent them to my son and they shipped well. They are awesome. I didn’t refrigerate the mixings and they turned out great. Used chopsticks for dipping in chocolate worked well. I did have to reheat the chocolate in the microwave. My recipe made about 30 candies, but I did make them a little smaller.
